Harry is actually more sarcastic than people realize; the "You don't have to call me sir, Professor," is just the classic example. :) I can see him learning it as a defense mechanism when he didn't have much contact with his friends.
Draco fought so very, very hard in this story to protect the vulnerable parts of himself.
